One of the fundamental backbones of beer brewing is the art of balancing bitterness (from hops) with sweetness (from malt) which is perhaps why beer has a high affinity with chocolate; itself a balancing act of bitterness from cacao nibs and sweetness from sugar, and did you know chocolate also undergoes a fermentation process during the production process!?
As well as the fundamental similarities, both beer and chocolate share very similar worlds of flavour profiles; if I described something as having notes of toffee, caramel, nuttiness, citrus or dark fruits, you might not be sure if I were talking about beer or chocolate. Plus both are known for their ability to pair delightfully with a range of robust adjuncts, be it lactose, fruit, nuts or even marshmallows, coconut or strong spirits such as rum and bourbon.
