Boon Brewery is situated in the famous Lembeek region, and renowned for their traditional lambic geuze and kriek beer. Despite the traditional styles, Boon have adopted distinctly modern brewing techniques and equipment. Headed by Frank Boon, the brewery create what is considered some of the best sour lambic beers in the world using the “Cloudy Wort” method, using 40% un-malted wheat. The distinct depth of flavour is created by the open fermentation method, with access to over 100 foeders. The foeders have been acquired over time from fellow brewers and wine makers, with the ancient oak allowing enough oxygen for the yeast to thrive. Boon’s beers age fantastically well, with the ability to age a bottle for up to 20 years.
