Rochefort Brewery may only produce three beers, but does it matter when they are three of the best Trappist beers in the world? The Belgian brewery is associated with the Rochefort Abbey, which originated in the thirteenth century; monks have been brewing beer at Rochefort since the sixteenth century. Key to the beer’s flavour is the local spring water, house yeast and a ‘secret herb’. Minor tweaks only have been made to the recipe which was established in the 1960s.
