Brasserie 3 Dames: Sauvageonne Limit
They say "This solera aged beer takes inspiration from the lambic tradition. A 3 year old blend of sour ale aged in Cabernet Sauvignon wine barrels. Each year we bottle a small quantity from the barrels containing the oldest beer. Back in 2014 Sauvageonne was first created by blending lambic from Oud Beersel with beer brewed in the brewery above the barrel stacks. Since that time as the beer is removed it has been replaced with spontaneously fermented beer from our sour production facility. After a small addition of fresh yeast and sugar this beer is bottled, corked and caged and then aged for a further 6 months. This is the most laborious and time consuming beer that we make."
We say "Let this be the centre piece at your next bottle club or beery soiree. This beer has wine-like qualities, with sharp and sweet white grapes, drying tannins, the spike of lemon and wooden notes. This beer is worth the wait, we recommend you buy 1 cellar 2."
